Spiced Irish potato recipe

Incorporating Irish potatoes in my diet is a tradition I've kept up with for a long period of time. To me, this is a clean getaway from the usual carbohydrate sources like rice and yams. It's rich in complex carbohydrates , High in dietary fiber and a very good source of vitamin B6, Vitamin C, Manganese, Copper, phosphorus, niacin and minerals such as potassium, magnesium and iron. It's also a versatile dish which could be eaten with almost anything. I had mine with Tomato egg Sauce, But this was because i ran out of fish to make Smoked fish stir fry. It could also go well with Beef stew or Chicken curry (Veggie chicken gravy), Barbecued fish, the list is endless.
